"Holy Shit, That's Not Alfredo?!"
What you will need:
2 heads of cauliflower florets (roughly 3 cups)
3 heaping cups cashews
6 cups unsweetened almond milk
2 tbsp nutritional yeast
1 tbsp salt
1/4 cup apple cider vinegar
3/4 cup lemon juice
1.5 tsp nutmeg
1 tbsp olive oil
2 tsp cracked black pepper
6 cloves garlic
Fresh lemon wedge to squeeze on each serving
red pepper flakes, peas, diced tomatoes, Sriracha, plant-based Parmesan cheese.
In a large sauce pan on medium heat, combine olive oil and minced or crushed garlic. When garlic is slightly browned add unsweetened almond milk and cauliflower florets and cashews. Bring to a low simmer. When ingredients are simmering, marrying, and getting all lovey dovey, add your nutritional yeast, salt, apple cider vinegar, nutmeg, and black pepper. Cover with lid and let simmer until cauliflower is soft. Uncover and let cool until it won't burn you if you touch it. It's okay if it's warm. Good job. Now transfer ingredients to blender (you may need to blend in portions depending on blender size). Add lemon juice. Blend until you reach desired consistency. You may or may not need to add more almond milk here depending on how thick you like your pasta sauce. You may also add your red pepper flakes into the blender if you want some heat. I don't add red pepper flakes until I'm finished the sauce because I want to portion out some that is toddler friendly and have some that is adult friendly. Now taste it! Does it need more salt or pepper? Add it. Perhaps in needs more lemon juice? You can add that now or squeeze a fresh wedge on top of your prepared meal. Boil fettuccine noodles and place your cooked noodles into an individual serving bowl. Pour your "Holy shit, that's not Alfredo sauce?!" on top.
Option: top with diced tomatoes / cooked peas / red pepper flakes / Sriracha / and or a plant-based Parmesan cheese now.
